The Quick List

Fermentation-made milk protein stayed stable at 140 °C where the dairy version clumped, in a study by authors tied to Vivici, the company making it [8][17].
Cultivated-meat labs published edible plant-protein scaffolds and a stemness fix for cultured chicken cells, all early lab results [14][4].
A truck of about 120 young cattle crashed in downtown Kansas City, and Vox uses it to examine how routinely brutal livestock transport is [31].
Sri Lanka's tusker Kavantissa died of a gunshot injury, and the public grief has turned into calls to address human-elephant conflict [30].

Authors from Vivici, dsm-firmenich, Fonterra and Massey University compared fermentation-derived beta-lactoglobulin with the milk version and found equivalent tertiary and quaternary structures [8][17]. At 140 °C the fermentation protein stayed translucent for 1800 seconds while the milk protein turned opaque after about 1200 [17]. Several authors work for or hold equity in Vivici, which has a patent pending related to the work, so this is the company team's own result [17].

By the numbers
  • 80-90%of milk-derived protein aggregated within 30 seconds at 140 °C [17]
  • 0.68packing fraction for heated milk protein at 6 wt% protein after 60 seconds, against below 0.60 for the fermentation version [17]

A scaffold study compared soy, pea and faba bean proteins and found that faba bean supported the highest cell proliferation, while mixed-protein scaffolds were harder and chewier [14]. A separate team found that chicken muscle satellite cells lose stemness after the third passage and flagged THBS1 and LAMA5 as candidate regulators [4]. Both are early lab results, not products [14][4].

A semitruck carrying close to 120 young cattle plunged off a highway interchange in downtown Kansas City, killing dozens and sending others running through the streets [31]. Vox's Future Perfect uses the crash to examine routine livestock transport, which a summer report from the US Government Accountability Office said can lead to injury, illness or death when poorly managed [31].

“can span many hours and thousands of miles, potentially exposing livestock to overcrowding, extreme temperatures, limited ventilation, and lack of access to water or food, among other things”

By the numbers
  • four to sixjourneys is common for most cattle raised for beef and dairy [31]
  • halfof cattle shipped to feedlots traveled more than 250 miles, and 22 percent traveled more than 500 miles, per a recent USDA report [31]
  • 20 millionanimals a year are dead on arrival or soon after at slaughterhouses, per a 2022 Guardian investigation [31]

Kavantissa, one of Sri Lanka's best-known wild tuskers, died on Oct. 16 after a gunshot injury, which the Department of Wildlife Conservation attributes to a trap gun [30]. The department says it made every effort to save him, critics question his veterinary care, and a court-ordered post-mortem is expected to establish the cause of death [30].
