A 12-week Dutch trial found an unsupervised vegan diet measurably shrank older adults' thigh muscle compared with an omnivorous diet, a loss resistance training mostly reversed [4].
A meta-analysis of seventeen studies found vegans have 23% lower total cancer risk than non-vegetarians, with the sharpest drops in stomach and colon cancer [24].
Amsterdam UMC researchers built a week of fully plant-based hospital menus to meet the Netherlands' 2030 mandate that 40% of hospital protein come from plants [62].

A meta-analysis of nearly 850,000 people found diets built on whole plant foods cut coronary heart disease risk 23%, while diets heavy on refined plant foods raised it [11].

MART PRODUCTION (via Pexels)

A 12-week randomized trial from Wageningen University put 72 healthy adults over 65 on a self-chosen vegan diet, their normal omnivorous diet, or a vegan diet paired with resistance training, then tracked their thigh muscles by MRI [4]. The unsupervised vegan group's protein intake fell hard, and their thigh muscle volume and lean mass shrank significantly more than the omnivorous group's, with measurably lower muscle protein synthesis [4]. Adding resistance training to the same vegan diet substantially narrowed that loss, closing most of the gap [4].

By the numbers
  • 72healthy adults 65 and older split into vegan, omnivorous, or vegan-plus-resistance-training groups for 12 weeks [4]
  • -27.7 g/ddrop in the unsupervised vegan group's protein intake in week 1, versus no significant change for omnivores [4]
  • -0.61 Lthigh muscle volume lost by the unsupervised vegan group, versus -0.01 L for omnivores and -0.35 L for vegans who also lifted weights [4]

A systematic review and meta-analysis of seventeen publications, seven of them prospective cohort studies, found vegetarians had a 13% lower risk of total cancer than non-vegetarians, and vegans had a 23% lower risk [24]. Vegetarians also showed a sharply lower risk of stomach and colon cancer, with smaller but still significant drops for pancreatic and bladder cancer [24]. Using World Cancer Research Fund criteria, the researchers rated the evidence for vegetarian diets and total, colorectal, colon, and breast cancer as "probable" [24].

By the numbers
  • 23%lower total cancer risk for vegans versus non-vegetarians, pooled across three studies [24]
  • 13%lower total cancer risk for vegetarians versus non-vegetarians, pooled across four studies [24]
  • 45%lower stomach cancer risk for vegetarians versus non-vegetarians [24]

A 16-person team of chefs, dietitians, and researchers at Amsterdam UMC spent April through December 2025 testing forty recipes and built a seven-day, fully plant-based hospital menu, publishing the results in the European Journal of Nutrition in June [62]. The dishes include a soy quark bowl, chickpea curry, and an eggplant pilaf with bean cassoulet, designed to hit real protein targets at a workable cost [62]. The Netherlands' Green Deal on Sustainable Healthcare requires hospitals to reach a 40/60 ratio of animal to plant protein by 2030, and the researchers call their menu a "practical blueprint" for getting there [62].

“This study demonstrates that fully plant-derived meals can provide adequate protein, be palatable, cost-effective, and feasible for clinical implementation.”
Amsterdam UMC-led research team, in the European Journal of Nutrition · [62]
By the numbers
  • 90-97gprotein delivered per day by the seven-day plant-based menu [62]
  • €10.50-€12.30daily cost per patient for the fully plant-based menu [62]
  • 22%cut in food emissions across 35 Sodexo-run UK hospitals after making plant-based the default option [62]

Gastroenterologist Will Bulsiewicz spent his medical fellowship succeeding on paper and miserable in real life: fifty pounds overweight, bloated, running on fast food and broken sleep [64]. On his Gut Insiders podcast, he tells the Physicians Committee's Chuck that what actually turned things around was treating his gut as part of the conversation instead of blaming his brain alone, and that eating for plant diversity, thirty different plants a week, was the piece that stuck [64]. He is no purist about it either: he says antidepressants have saved lives and belong in the toolkit too, alongside the beans [64].
