Whey

Whey is the liquid left when milk curdles, dried into powder. It is milk, so it is not vegan, and it hides in more than protein shakes.

What it is

Whey is what remains after milk is curdled and the solid curds are removed for cheese: a watery, protein-rich liquid that is dried into whey powder and whey protein. It is milk by another name, which is why it sits on the US major-allergen list as a milk-derived ingredient and why it is not vegan.

Where it hides

Beyond the obvious tub of protein powder, whey turns up in milk chocolate and even some bars labelled dark, in breads and crackers for browning and texture, and in savoury snacks and dips. It often travels with casein and lactose, so spotting one is a good reason to read for the other two. Pea, soy, rice and hemp proteins are the vegan swaps for whey powder.
