What it is
Mono- and diglycerides are emulsifiers, the quiet helpers that keep oil and water from separating so bread stays soft and ice cream stays smooth. Each molecule is a backbone of glycerol carrying one or two fatty acids, and both of those parts come from fat. Manufacturers make them by reacting glycerol with fats and oils, or with fatty acids, which the US regulations say may be any that are 'derived from edible sources'. That phrase is the whole problem for a vegan reader, because edible fats include soya, palm and sunflower oil but also beef tallow and lard. When European regulators re-evaluated E471 they listed exactly those raw materials side by side, from coconut and rapeseed through to tallow and lard, with nothing on the packet to separate them.
Why the label will not tell you
You will find E471 across the bread aisle, in margarine, in cheap ice cream, in biscuits and snack bars, and in the little tubs of coffee whitener. On a European label it hides behind the code E471 or the phrase 'mono- and diglycerides of fatty acids'; in the United States it is usually just 'mono- and diglycerides'. Neither version tells you whether the fat was pressed from a plant or rendered from an animal, and the two are chemically almost identical once processed, so you cannot tell by reading harder. In practice most large food makers now use palm or soya oil because it is cheaper and simpler to source, but most is not all, and nothing on the packet promises it. The only ways to be sure are to pick a product carrying a registered vegan trademark, or to email the manufacturer and ask which fat they use for their E471.
How it is made
Mono- and diglycerides are made by reacting whole fats or oils with glycerol, usually through glycerolysis: heating a fat with excess glycerin to somewhere around 200 to 250C with a catalyst, which strips two of the three fatty acid chains off the glycerol backbone. The output is a standardised blend used to bind water and fat together in bread, margarine, peanut butter, non-dairy creamer and processed meat. In the EU and UK it is E471; in the US it is spelled out as mono- and diglycerides of fatty acids.
The verdict is conditional because the starting fat can be palm, soybean, rapeseed or sunflower oil, or it can be beef tallow or lard. US processors historically leaned on tallow because it was a cheap slaughterhouse byproduct; European manufacturers shifted harder toward palm and rapeseed through the 1990s and 2000s. Once the reaction finishes the molecule is identical either way, so no test on a shop shelf can separate them, and no regulator requires the distinction because both pass the same safety review.
How to tell
Qualifying language or certification is the only real read. Wording such as vegetable mono- and diglycerides, or a vegan, vegetarian, kosher parve or halal mark, effectively screens out tallow, since none of those certifications would pass an animal-fat emulsifier undisclosed. Absent that, EU and UK manufacturers sometimes volunteer a vegetable-origin note even though nothing compels it. US ingredient statements almost never specify, which leaves contacting the manufacturer, and large food companies do keep internal sourcing records they will share when asked.
What the rules say
The EU’s food safety authority re-evaluated E471 in 2017 and issued a follow-up opinion in 2021 covering use in infant formula. Both tightened limits on processing contaminants that can form under high heat, and neither addressed animal against plant sourcing, because that is a labelling question rather than a safety one. Nothing in the EU additive rules requires origin to be declared on the pack.
