What it is
Glycerol, sold as glycerin or glycerine, is a clear syrup that tastes faintly sweet and clings on to water, which makes it handy for keeping cakes moist, icing pliable and toothpaste from drying out. Most of it is made by splitting fats and oils apart under high heat and pressure, the same reaction that sits at the heart of soap-making and biodiesel production, with glycerol falling out as a valuable by-product. The snag for a vegan reader is that the fats fed into that reaction can be vegetable oils like palm and soya, or animal fats, and the finished glycerol is identical either way. European safety reviewers also describe two other routes: building it synthetically from propene, a gas from petroleum refining, and growing it by fermentation with yeasts or bacteria. So a single ingredient, glycerin, can trace back to a plant, an animal or an oil refinery.
How to tell
Glycerin is almost everywhere: in icing and fondant, chewy protein and cereal bars, moist low-fat cakes, toothpaste and mouthwash, cough syrups and the liquid in vapes. On a food label it shows up as glycerol, glycerine or the code E422, none of which reveal the source. The useful signal to look for is the phrase 'vegetable glycerine' or the letters VG, which is standard in cosmetics and e-liquids and tells you the glycerol came from plants. A plain 'glycerin' or 'E422' with no such note is genuinely ambiguous, and the surest way to settle it is to ask the manufacturer which feedstock they use. It is worth knowing that in 2022 European safety reviewers recommended tightening the official definition of E422 so that food-grade glycerol is made only from vegetable oils and fats, a change that both confirms non-plant glycerol has been circulating and points the whole category towards plants.
How it is made
Glycerol is the three-carbon backbone of every triglyceride, which is to say of every fat and oil, whether that fat came from a soybean, a coconut or a cow. Industry gets it by splitting triglycerides apart, either through saponification, the same reaction that makes soap, or through the transesterification that makes biodiesel. Both cleave the fatty acid chains off the backbone and leave glycerol behind. Around a tenth of the weight going into a batch of biodiesel comes back out as crude glycerol.
That is why the verdict here is a genuine it-depends rather than a hedge. The same molecule, refined to the same pharmaceutical specification, can start from soy, palm or rapeseed oil, from rendered beef or pork fat, or from petrochemical propylene with no animal or plant input at all. Once purified, glycerol from those three origins is chemically indistinguishable, and no shelf-side test separates them. The useful news is that most glycerin on the market today is a biodiesel byproduct, and biodiesel runs overwhelmingly on vegetable oil.
How to tell
The label alone will not settle it in either the US or the EU, because glycerin, glycerine, glycerol and E422 all cover every production route. The one word carrying real information is vegetable, as in vegetable glycerin, which is a specific claim about the feedstock. Beyond that, a Vegan Society or Certified Vegan mark on the finished product is the dependable route, and kosher certification sometimes helps, because some agencies require the fat source to be disclosed to them even when it never reaches the pack.
What the rules say
In the US, glycerin is generally recognised as safe with no restriction on where it came from. The EU may be about to diverge: a 2022 follow-up opinion from the European food safety authority recommended restricting E422 to glycerol obtained from vegetable oils and fats and purified by distillation, aimed at closing off routes that can carry impurities such as acrolein. That is a safety recommendation rather than an ethical one, but if it is written into EU law it would quietly turn E422 into a reliably plant-derived ingredient in European food.
