The owner of Santi Pura in Madrid built a vegan cocido madrileño before anyone came looking for one. Cocido is Madrid's most personal dish: a long-simmered chickpea and vegetable stew, the kind of thing Madrileños eat at home on Sundays, almost never ordered in a restaurant. He developed a vegan version with house-made sausages and kept it on the menu anyway. Last week, a group of vegan travelers sat down to it in his dining room: noodle soup first, then chickpeas, then carrots, cabbage, potatoes, the sausages.
